Mexican Shrimp Cocktail: 1-2 lb. shelled & cooked shrimp, 50-60 count; 2-3 large tomatoes, chopped; small white onions, chopped, or 2 green onions; 1 c. cilantro, slightly chopped; 1 jalapeno, diced w/seeds; 1 avocado, chopped; tomato juice (V8); lime juice; salt; pepper. Mix all in glass bowl & chill; serve w/crackers
